Success

it's the sweet taste of success that i've been waiting for.. 
The baileys cupcake finally turned out awesome ! 
Everyone could taste it ! 

I think the trick is to poke a few holes into the cake and really drizzle a small amount baileys on the top, let it soak up some of the alcohol.

My cousin and I went on to explore a new flavour, Rosemary and Honey.
This is really one strange tasting cupcake, it tastes like its made for breakfast more than anything else. 
The mandarin oranges on the top were there cos i thought it will make look more festive since its CNY.

Cupcake Tasting

i have been thinking about investing in an oven for the longest time and the reason that always stop me is that my place will be ready by year end and it will come with a built in oven. So what's the point of getting on now ?

but there are more compelling reasons to get one because i have been bothering many people each time the baking bug bites me.

i would love to be able to bake more flavours, but i'm using someone else's place and not so nice right ... to use their eletricity and water.... haiz ...

That aside, i've completed my first cupcake tasting session. Went quite well i must say.



Its super unlikely that one will be able to guess what flavours they are by just looking at them.
they are mainly mocha, strawberry and baileys. i have an issue that people who ate the baileys either found it very strong or don't taste it at all. I've substitute the milk entirely with baileys but i still dunno why people can't taste it.

i call my cupcake tasting session a success ! and look forward to more of such events :)

Testing Recipes

Ever since I bought the book Cupcake with Attitude, I've been dying to try out the Strawberry Cupcake recipe and Stout Cupcake recipe. I tried the strawberry recipe once and it didn't turn out too well. As the inside weren't cooked through, quite disappointing.

This time, Rach and Jacinta wanted to try out cupcake making and i thought, why not try the strawberries and stout.


Don't these cupcakes look awesome ! so yummilicious !! and they are ! The best part of the cupcake is that the buttercream frosting tastes a little like ice cream. I would love to put them on a nice plate and then try take a professional shot of them :)

Stout Cupcakes with Irish Chocolate 
You might be wondering what the hell is Irish chocolate !? Irish chocolate is chocolate brought back from Ireland by Rachel ! hahahaha. What buttercream did we use ? Swiss Meringue buttercream with stout. While mixing the stout in, Rachel, Jacinta and myself kept sticking our fingers in and wondering "why not taste of stout ?" After chilling the cupcakes, we took one cupcake and " Oh my God !!! I can taste the Stout!"
Amazing. and the best part has to be the cupcakes aren't that sweet too !

Creme Brulee

Dessert making is indeed a stress reliever.
I love the colours you could put into dessert, the fruits I could add and the smiles on people's face.

The thing about baking cupcakes is that you would always want to put buttercream on your cupcake to make it look very pretty and somehow cupcakes aren't complete without the buttercream.

My recipe on swiss meringue buttercream uses only the egg whites and not the egg yolks. It such a pity throwing good food away. So what i did was search of something that uses only egg yolks and i found ...

CREME BRULEE !!

Creme brulee is a dessert with simple ingredients and is fail proof (almost).  It consists of egg yolks, whipping cream, vanilla essence (i use only the ones from niels massey) and sugar !Simple yet amazing tasting stuff.
Only thing about it is the need to use ramekins. Why ? that's because not all ceramic bowls can withstand the heat of the oven ! Some might cracked in the high heat.
